Apple Cinnamon Muffins

A wholegrain muffin is a great addition to a performance lunch box. These apple cinnamon muffins are a family favourite of ours. Made with wholemeal flour and include 1/2 a cup of high protein greek yoghurt making them a nutritious but satisfying option for a school lunch box or a super snack for teen athletes on the go.

With the natural sweetness from apples and a hint of warmth from the cinnamon they are a perfect post training snack or a breakfast on the go when paired with a high protein yoghurt pouch!

Each muffin contains complex carbohydrates from the wholemeal flour and the protein supporting recovery and helping to maintain energy throughout the day. Delicious and portable they are a great choice for a nutritious snack.

The Recipe

Ingredients:

Makes 12 muffins

  • 1 cup Self raising flour

  • 1 1/4 cup plain wholemeal flour

  • 1/4 a cup of sugar

  • 1 teaspoon of cinnamon

  • 1 teaspoon of vanilla extract

  • 100g butter

  • 1/2 cup of milk

  • 1/2 cup of high protein greek yoghurt

  • 2 eggs

  • 400g of diced or canned apples

    Directions:

  • Preheat oven to 180 degrees

  • Line muffin tray with baking paper or patty pan

  • Combine melted butter and sugar

  • Add dry ingredients to bowl

  • Stir through

  • Add butter and sugar

  • Add milk, eggs and yoghurt & combine

  • Fold through apples

  • Pour batter into muffin tins

  • Bake for 25 - 30 mins

Top Tip:

Add 1/4 cup of chia seeds for crunch
