High Protein Egg Muffins

In our house the crossover with summer and winter sports is the busiest time of the year. Pre-season training in one sport overlapping with finals for another means being organised and having a quick and nutritious snacks on hand for school lunches or pre and post training snacks is essential to maintain energy levels and support training recovery.. Also trying to avoid an expensive trip to the service station for a post training snack most nights of the week.

These quick and easy high protein ham and egg muffins are a lifesaver and perfect for anyone on the go!

Packed with eggs, cheese and lean protein each muffin offers lasting energy with the protein supporting muscle repair and recovery. This quick and easy recipe is easy to make ahead, perfect for the busy mornings when every minute counts or a mid afternoon snack !

The Recipe

Ingredients:

Makes 6 egg cups

  • 1 dozen jumbo eggs

  • 300 g of ham

  • 300 g of grated cheese

  • Pepper to taste

    Directions:

  • Preheat oven to 180 degrees

  • Line muffin tray with baking paper

  • Place 2 slices of ham in each muffin

  • Crack 1 jumbo egg over the ham in each individual muffin

  • Sprinkle grated cheese on the top of each muffin

  • Bake for 20mins

Top Tip:

  • Add more nutrition by adding some green with a small amount of grated zucchini or baby spinach with fetta cheese!

  • 1/2 the recipe and only make 6.
